Extremely Low Carb Taco Dinner
One of my biggest frustrations when looking for new low carb recipes is that the majority of “low carb” recipes I find aren’t low carb. I’m not looking for zero carb, but if one of the ingredients is flour, corn, or bread (even if it says on the box high fiber or lower carb) it probably isn’t on to the okay list.
Here is a low Mexican dinner that you can eat, even during induction on Atkins, but is also delicious enough to eat no matter if you are on a higher carb intake such as South Beach, Protein Power, Carbohydrate Addicts Diet, or higher Phases of Atkins.
Low Carb Taco Shell Recipe
It isn’t what you put in your taco that has all the carbs, it’s the shell itself. It is actually very simple to make a zero carb taco shell. You will need two ingredients;
2 cups Shredded Cheese
1 cup ground pork rinds
Mix the cheese and pork rinds together in a bowl. On a microwavable flat plate spread a handful of cheese/rinds in an even layer circle. Microwave on high for about 1 ½ minutes. Carefully take the plate out of the microwave. Allow the cheese to cool. Before it is hard, fold the cheese over so it looks like a taco shell; let it finish cooling in this position. Repeat with the rest of the cheese/rind mixture until you have your shells.
These shells are zero carbs and delicious. Now you can add ground beef, shredded cheese, and lettuce. Stay away from tomatoes and onions which have a high carb count.
If you are looking to add salsa there are a few ways to make your own lower carb salsa, but unfortunately the two main ingredients in salsa (tomatoes and onions) have a high carb count. My suggestion if you love the salsa taste, is to use fresh tomato and onions on your taco instead.
Low Carb Taco Beef
When preparing your meat for tacos, stay away from the packaged taco seasoning which contain sugar and flour. Brown your meat and add the following;
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon chili powder
1/2 teaspoon paprika
A pinch of black pepper
Now you have your low carb taco meat, low carb cheese taco shells, and once you add your lettuce and shredded cheese you have a delicious extremely low carb taco!
