Boneless chicken breasts are a dream ingredient for those that are watching fat and calories. As well it is a quick cooking ingredient that helps put supper on the table faster which helps people to resist the urge to go out to eat.
The problem with chicken breasts are that the same old chicken recipes get a little old and to vary the recipes ends up defeating the low-fat quslity of the chicken breast with fattening ingredients. These are a few low-fat recipes for using chicken breasts.
CHICKEN PASTA PRIMAVERA
2 cups of chopped fresh vegetables
2 cups cooked liguine, drained
1 chicken breast cooked or grilled and cut in strips
1/2 cup grated parmesan cheese
Cook and stir vegetables in a little olive oil for about 5 minutes.
Add linguine and chicken strips. Cook for 3 minutes.
Stir in cheese and serve.
4 chicken breast
1 can sliced pineapple(drain/reserve juice)
1/2 cup sugar
1 chicken boullion cube
1/4 teaspoon ginger
2 Tablespoons cornstarch
3/4 cup cider vinegar
1 green pepper cut in rings
Brush the chicken breasts with a little olive oil and season with salt and pepper.
Lightly brown in a non-stick skillet.
Drain pineapple and reserve juice.
Pour the juice in a suace pan and add all of the remaining ingerdients except the pineapple and green pepper. Boil 2 minutes.
Place the chicken in a casserole dish. Pour the pineapple sauce over the top.
Bake uncovered for 30 minutes.
Top with pineapple rings and 1 green pepper cut in rings.
Bake another 30 minutes and serve.
ITALIAN CROCKPOT CHICKEN
4 chicken breasts
1/2 cup parmesan cheese
1 teaspoon Italian seasoning
1/4-1/2 cup water
1/2 cup fat free Italian dressing
4 medium potatoes peeled and cut in wedges
Place chicken in the crockpot.
Put 1/2 of the potato wedges over the top.
Sprinkle with 1/2 of the cheese, seasoning and dressing.
Add the rest of the potatoes and top with the remaining seaasoning, cheese and dressing.
Add 1/4-1/2 cup of water.
Cover and cook on low for 6-8 hours.
