This meatloaf will make your family say “yum!” as they take the first bite and the last. If you follow this recipe then you will have a moist texture with such a rich flavor it will satisfy everyone’s taste buds.
It is quite easy to make and can also be prepared in a microwave to cut cooking time. Baking time will take about 45 minutes and microwave time will take about twenty minutes.
Go to the store and purchase the following ingredients:
one and a half pound of ground beef
one half cup of ketchup
one third cup tomato juice
one half teaspoon salt
one half teaspoon pepper
an eighth teaspoon of red pepper
three quarters cup fresh bread crumbs
one quarter cup finely chopped green pepper
one quarter cup finely chopped onion
two teaspoons mustard
For the topping you will need:
one quarter cup ketchup
one half teaspoon mustard
two teaspoons of brown sugar
fresh parsley to garnish on top
First in a small bowl beat the two eggs. In a large mixing bowl combine the ketchup, tomato juice, salt, black pepper, red pepper, eggs, bread crumbs, green pepper, onions, and mustard. Stir until the mix is thoroughly blended.
Then add the ground beef. Some people mix with their hands but if you use this method then use gloves or make sure your hands are clean. I prefer to mix with a hand mixer. Mix gently but as thoroughly as possible.
Get a nine inch by five inch pan and line the loaf pan with aluminum foil. Gently press the meatloaf mixture into the loaf pan. Get a separate bowl to combine the topping ingredients. Mix the ketchup, mustard and brown sugar well. Pour the topping over the meatloaf.
Heat the oven to 400 degrees and bake on the middle rack until done about thirty-five to fourty-five minutes. Remove from the oven and drain off the excess fat. Let the meatloaf cool a few minutes before serving. Top it off with fresh parsley and serve.
This dish goes well with tossed salad or mixed vegetables. It’s a family friendly meal that can be served in a casual atmosphere. However, if presented properly this meal is tasty enough to serve while entertaining.
